The basic direction
for Armenian style stews or meats cooked with vegetables is
as follows:
Braise the meat in a little butter, add onions and cook a few
minutes more. If the vegetable to be used is of the variety
that takes longer to cook, then add vegetable, tomato sauce
and seasoning to meat and cook together covered on slow fire
or bake in oven until tender.
If the vegetable is of the variety that does not take long to
cook, then add water to the braised meat and cook covered on
slow fire until almost tender, about 30 minutes, then add your
vegetable, tomato and seasonings and cook another 30 minutes,
or until done.
Practically any vegetable may be cooked with meat in this manner.
