Ingredients
1 liver
2 large onions, chopped
1/4 bunch parsley
1/2 cup olive oil
1/2 cup or more flour
Salt and pepper to taste

Peel skin
of liver, cut length-wise 1/8 of an inch thick. Dip in flour
and fry in hot olive oil until brown. Cut and fry onions in
left over olive oil until soft. Chop parsley and mix with
onions. By this time the liver will be cool. Cut them in small
cubes. Mix with onion and parsley mixture, season with salt
and pepper. Serve hot or cold.
