Ingredients
2 lbs. ground beef, round steak preferred
Salt, pepper, cayenne pepper to taste
2 teaspoons paprika
1 teaspoon chaimen
1 teaspoon chili powder
1 teaspoon kimion
1 clove of garlic
2 tablespoons tomato sauce

Add all the ingredients to the meat
and mix together with your hand. Knead like a dough. Then
let it stand at least one hour, over-night if possible. Put
this mixture in a deep frying pan and cook slowly, always
stirring, until the moisture is gone and the meat starts forming
into pea size shape. Dilute the tomato sauce with one cup
of water and add to the meat. Cover and cook 20 minutes more.
Add more water if necessary. Serve with spaghetti, macaroni,
a vegetable, or mashed potatoes. Serves 4-6.
As Fried Kufta: The same mixture can be used
for Kufta. Shape the meat mixture into small balls and fry
them in olive oil. Serve hot or cold.
