Fry the chops in their own
fat. When done arrange them in a separate pan. Add 1/2 tablespoon
of butter to the fat left in the frying pan and 1/2 cup water
and bring to a boil. Add 1 cup tomato, a chopped green pepper,
2 onions, salt, pepper and paprika, and a sprinkling of thyme
if desired. Cook this mixture, covered, about 15 minutes on
slow fire. Then pour this sauce over the chops and bake in moderate
oven for 15 minutes. This sauce is enough for 4 chops.
