Ingredients
1/2 lb. ground meat
1 onion, chopped
1 cup rice
Salt and pepper
Parsley, chopped
2 eggs

Cook the meat, onions, salt and pepper
in a little butter until meat is tender. Add some chopped
parsley and mix together. Wash and drain the rice, and cook
it in 1 1/2 cup salted boiling water. When all the water is
absorbed, remove from fire and let cool a little. Shape rice
with your hands into small balls; then shape it again like
a cup. Fill with meat and cover by bringing the rice walls
together. Dip it in beaten egg and fry in butter.
Potato Kufta: Make mashed potatoes and use
it in place of cooked rice as directed above.
